The hope is that if abnormally high blood-cholesterol levels are reduced, the patient will be protected against a form of hardening of the arteries that sets the stage for most heart attacks.



It has not yet been proved, however, that mere reduction of blood cholesterol will prevent a heart attack or postpone one by 30 seconds. In the absence of exact medical knowledge about manifold factors of heart disease, many physicians think it prudent to reduce too-high blood cholesterol levels by anyone of several means.

Blood cholesterol levels may often be reduced by substituting fats or oils that are high in unsaturated fatty acids for ordinary dietary fats. This is the only medical use of such products that has been well documented by serious scientific studies. Another generally effective way of reducing high cholesterol levels is to slim down to normal weight, if one is obese, or to reduce the total dietary intake of fats and oils of whatever kind.

About 45 per cent of the calories of the average American diet is furnished by fats and oils. Many nutritionists feel that this is too high a proportion for sustained good health, and that for vigorous well-being, not much more than 30 per cent of daily calorie intake should be furnished by fats and oils. For one thing, fats tend to dilute the quality of your nutrition. Fats and oils do not furnish any proteins or minerals, and virtually no vitamins, except for Vitamins A and D in butter, cream, cheese, eggs and fortified margarines.

Should your doctor tell you that you ought ,to reduce your total fat consumption, and replace the fats you eat with products that are high in unsaturated fatty acids, there is no reason to spend money for costly capsules. Some capsules of exotic oils sell for $6 or more per 100. While the proportion of unsaturated fatty acids may be slightly greater than in everyday salad oils, it is not significantly greater in terms of daily consumption. You can get 30 to 40 times more unsaturated fatty acids by buying a quart of corn or cottonseed oil at your grocery for less than fifty cents.

In passing, it may help to know that it is quite impossible for a human being to be a fathead. The brain is the only organ of the body from which true fats are conspicuously absent.
